MOLTO - The Cookie We've Eaten Every Sunday for Seven Years in London (And Why We Rebuilt It)

For seven years, in our flat in London, the same thing has happened most Sunday evenings. A pack of supermarket chocolate chip cookies, thirty seconds in the microwave until the centre goes soft, a scoop of ice cream on top, usually something rich, sometimes salted caramel. It's a ritual we've kept between us since we started living together, and it's never once stopped feeling like exactly the right thing to do on a Sunday.
It's also never once not had a cost the next morning.
A lot of sugar in one sitting, and a cost the next morning we'd learned to expect: a bit sluggish, a bit foggy, not quite ourselves. That was just the thing we'd quietly agreed to accept in exchange for keeping the ritual.
We didn't want to stop having it. We wanted to stop paying for it.
So we started building the version that should have existed already: the same ritual, warm cookie, cold ice cream, thirty seconds in the microwave, but made from ingredients we could actually read and recognise. No industrial seed oils. No gums. No refined sugar doing all the sweetening on its own. Dates, real butter, dark chocolate, oats, almonds, a little honey, a little miso to round out the flavour the way a pinch of salt rounds out caramel.
It took a long time to get the texture right. Early versions went rubbery in the microwave or tasted flat because an ingredient hadn't distributed properly. We kept adjusting, kept tasting, kept comparing against the supermarket version we were trying to improve on, not replace. The goal was never to make a "healthy cookie," a phrase we've banned ourselves from using because it always seems to mean a worse one. The goal was to make the actual cookie, minus the parts that shouldn't have been necessary in the first place.
What came out the other side is the pack you can order today, baked in our kitchen in Nine Elms and delivered across London and the rest of the UK. Same ritual. Real ingredients. The kind of thing you can eat the whole pack of and wake up the next day exactly the way you'd expect to, which is to say: fine.
